Done had to dump the elderberry. Mike got trying to doctor it up some and it went putrid bad. Still have a gallon of berries left. Maybe I'll try again. The black raspberry is soooooo smmooooooth! Real nice sipping wine. Will definitely be labeling this as a "Special Reserve Christmas Cheer" First gallon jug of fox grape is....well.....GONE! It was good while it lasted. Made up another big water jug last night. I think I'm getting the knack.

Too cool, enjoying that home brew!
Dad's got only a few bottles left of the peach and strawberry wines he made a couple of years ago and one's in reserve for Thanksgiving.
There's a fruit stand in Brookesville, about fourteen miles south of here, that's agreed to save all their bad produce for me to feed the critters around here. Any peaches and such comes through I'm setting them aside for Dad, then hoping we don't get a repeat of the blueberry wine episode of last year cause that stuff went skunky fast!

The black raspberry is soooooo smmooooooth! Real nice sipping wine. HELP!!!! What would cause a sudden, rapid increase in alcohol content?? Went to get a little sip last night and it's running along the lines of ether!! One sip and my head started pounding violently. Kinda tastes like rubbing alcohol at this point. Is there any way to temper this stuff??? What methods, if any, do y'all use to check the alcohol content??

But to smooth it out just put in another cup or two of sugar and let it work some more until it quits giving off gas.

That's what I was going to do. But somehow something in my mind told me that it's the yeast and sugar that makes the alcohol...(maybe it was one of them voices I was hearing after tasting this stuff)...wouldn't more sugar equal more alcohol?

Have been given orders to pick up 25# of sugar and get the remaining three gallons of last years elderberry harvest working. This years elderberries should be ready in about 3 or 4 weeks. Would have loved to get some black raspberries this year. I think I've near mastered raspberry ripple. But was extremely too hot to risk keeling over in some isolated thicket where I wouldn't be found until deer season.

Dang, I been so busy lately I hadn't given the elderberries a thought! I know where they're ripe too, I gotta talk the kids into coming along for some wine fixings. I know I can get dad to tend to it if I get im a five gallon bucket full.

Of course I got my feet lcovered with ivy! ;D Have not had one spot of poison ivy all year!! But the chiggers eat me up in the morning when I'm feeding the critters. Guess it might help if I quit doing chores in my nighty, huh?

One carboy is a dead ringer for Tickle Pink!! The other ain't too awfully bad either - if I do say so myself. Just a little dryer than I personally prefer.

Hey! Was wondering if any of y'all ever tried making cranberry wine?? I raided all the stores around here and ended up with a 5 gallong bucket full. Guess I'll have to sacrifice some to see if it'll work.
