Actually, before I cut out potatos, I used to make a mean hash brown.....Just plain and simple...boiled about 5 lbs of potatos to a semi soft consistancy....diced them all up...sautead about 4-5 large onions in bacon fat...placed them in a large pan with salt, pepper and loads of parika, and just stired them until they looked and smelled good.....I was able to get just a good smattering of crispyness to enjoy that good mix in texture....

(chuckle) Well, maybe I ain't doing mine right...cause they aren't uniform in the size of the chunks. About the powdered sugar...reminds me of the guys at work...they accused me of trying to impersonate an officer...I got caught last week with powdered sugar from a doughnut on my face. ;D And that fake sugar looks too darned much like a certain controlled substance! "Honest ossifer, it's just sugar substitute." ;D Sugar Twin The Other White Powder!!

If you like dem taters so much, try ricing some cauliflower, and mix with some heavy cream, salt, pepper, and butter(NOT that Smart Arse stuff)....tastes about as good as dem taters...... ;D..zero carbs

I eat lots of cauliflower and broccoli too. Almost always a head in the fridge. Try this put a head, with the stalk trimmed off pretty flush in a oven safe dish with some nice sharp cheddar draped over the crown with a little pepper and cover it up and braise it at 350 for about 20 minutes. I add some bacon to the top too and maybe some salad fixin's. You know those shake on crunchies. Ain't too bad for cauliflower! Would rather have a steak though!!
