Different knives are used for different things. How sharp do you keep yours? What do you use them for?
My favorite all-around knife is a french chef's knife, I usually sharpen it so the first 4 inches from the handle are shaving-sharp, the rest a little more angled for chopping through stuff. I use it for everything from hacking apart a broccoli, chopping a pineapple in one cut, dicing herbs, cutting fish, and slicing up a london broil.
I'm forging my own cleaver, that I hope will replace the french that was given to me. I like to use my own knives. The cleaver started life as a lawnmower blade.

Same here. French chef's knife that was a gift. I have three or four now. My knives for reenacting are Old Hickory or the two butcher knives, ground now to boning knives, that belonged to my grGrandMother. Stillwork just fine!
