heck I know I dont look like our friend Ferris..but here goes...I don't do it like anyone else I know so bare with me....I cut the skin like I would or rather most folks do when table carving...then I use my hands to remove the meat...I pull the drumies off and seperate the thigh from the leg bone the pinch the meat at the top of the bone and twist it comes off in big full length chunks..I use my thumbs to push the meat from the breast bone and peel it away all this gets put on the cutting board... after most of the meat is off the major bone structure I slice it up..smooth and simple...first time I did this at mom's my sisters all freaked out...Our big dinners are more like a smogasborg than anything else..Mom's house is much to small for a table setting like we had when we were kids..so this is easier and quicker...I forgot to mention first off always let the bird rest for at least 10 to 20 mins before carving..allows the juices to set but still stays warm.. (it actually will continue to cook for about 10 mins before the temps start to reduce)

I carve a turkey similar to the way Two Tails do it.
I loosen the breast meat in one pice by cutting and peeling the breats of the sternum bone and then down along the ribs. I end up with two big slabs of meat which I now cut into medailions. Then I cut off the wings at the shoulder joint and make a second cut at the "elbow" joint. I am now left with the meaty "upper arms". Now I turn my attention to the turkeys leg. I cut them off at the hip bone and the next cut takes of the drum sticks. The bone in the thigh is twisted out and the meat sliced. The drum sticks are served as is.
The skeleton goes into a dish and into the fridge and will be used later to make gravy or becomes a mouth watering, lip smacking meal for my dog.
I arrange the cut medallions in the middle of a platter. The two middle rows are the breast meat followed by a row of thigh meat on either side. The wings go at one end of the platter and the drum sticks on the opposite site. Garnish with salad leaves and carved baby tomatoes and carrots.
Carving the complete turkey up and cutting it into medallions gives everybody the same amount of meat and saves me or my wife from getting up to serve the guests. It also stops the ignorant guests from carving a huge piece for themselves and only leave the bones to suck on for the others.

I usually just kinda ease the turkey towardsthe table and a couple hands come out and the the platter disappears, then in just a few seconds, the platter comes back with a pile of bones on it. Miss Kathy and I just make sure we get ours before we let it get close enough to the boys to grab. I guess it's kinda like feeding the lions or gators, get it close enough but not too close or you may loose a finger or 2..... ;D ;D ;D ;D Actually, I carve it alot like Othmar and Ralph and Steve. ;D

Matt has seemed to calm down a little since he got engaged. Or maybe he's got a soft spot for Addison. She likes to chew bones, she's been doing it for at least 3 months now. I guess we'll find out when we show up on Preacher Freddies door step with a tent, fishing poles and lantern looking for the keys to his boat.....No worries Preacher Freddie, he ain't never ate no upholstry.....yet... ;D

Ain't no bigge Preacher. If'n it does have keys and I can't find them, I can hotwire it almost as quick.....lol. I would bring mine but I gotta save enough to do the wheel bearings on the trailer and install the hitch on the new car. Matt has been heading up your way almost every weekend lately. If only for the day. He's chasing them stripers But at least he's staying outta trouble, for the most part..... ;D I told him if he got a couple around 5 lbs I'd bake them up for him. I just lay them on their back and fill the cavity with some butter, garlic, onion and green pepper then bake until done just right. Nwew England style if you will. Good eats ;D
