Any thoughts here?? I remember being told something about how I had to adjust my baking, back when I was a kid working in the activities dept. of a nursing home. I think we were baking Christmas cookies then. They just wouldn't brown at all.
At home, I've always used a conventional oven. Now that we're at my MIL's, she has a convection oven. Seems like my baked goods don't brown the same. Muffins, for instance, raise up. But then the tops spread out before they start to brown. Instead of a nice rounded "crown" top, they look more wide and flat. Bread is doing good, but the bottoms start to darken before the top browns. Have also noticed with pies that the filling is near bubbling before the crust starts to set.
What's up with this??
I've checked my temp with an oven thermometer and the setting is right on the money.
I asked MIL if she has any ideas on this. She's had this range for 4 years and I'm the first person to ever turn on the oven. In fact, only one of the burners had been used!

Get out the owner's manual! If it is an electric configuration you might be able to compensate by preheating it on broil to arrange for the top to get a little hotter. That's what it sounds like the problem is that the top is losing heat. I had the same problem with my toaster oven and my Coleman camp oven. The toaster oven I preheat on rotisserie using both elements and creating the top heat. The camp oven I stick the 14 inch iron skillet on top of it. The iron heats up, holds, and returns the heat through radiation thus the problems are resolved. Might move the rack up a notch too.

Faith,
I use a convection oven often at Scout camp..it's a commercial type so I don't know if it would function the same but here goes it's a gas oven and to bake with it we just shut off the fan..every thing browns up just fine...might give that some thought ;D ;D ;D
