Hey everybody... Just wanted to ask ya if anyone knows how to make bead pudding. I have asked pawclaws and he found alot of things and maybe one of the recipes. But I don't know how she made it or where to start That is why I am wanted to ask ya and maybe ya have the same recipes or a little different. My grandmother passed away about 3 years ago and she used to make chocolate and vanilla bread pudding. If ya could help please give me ya's recipe.. I appreciate it..

Rogue Warriors Bread Pudding-New Orleans Style
1 Loaf Stale French Bread 2 Cups Milk 3 Eggs Beaten l Teaspoon Vanilla 1 Tablespoon Cinnamon 1/2 Cup Raw White Or Brown Sugar 1 Cup Raisins 1 Cup Chopped Canned Pineapple 1/2 Cup Butter.....Melted 1/4 Teaspoon Salt 1/2 Cup Chopped Walnuts Or Pecans (Optional)
Preheat Oven to 350 Degrees Tear the bread into small pieces and place in a bowl. Cover with the milk and let soak 15 to 20 minutes Then mash the bread to get rid of any remaining chunks Add the eggs, vanilla, cinnamon, sugar, raisins, pineapple, butter, salt and nuts, if desired, and mix well Pour into a buttered 8- to 9- inchsquare or round baking pan and bake for about 45 minutes, until set in the middle and browned on top
Cut in wedges or squares and serve with sweetened whipped cream, flavor with Grand Marnier and brandy if desired
Bill says this comes from an out of business New Orleans restaurant and made him cry when he fixed it.

When you want a “Granny Style” bread pudding, ask a Granny! I did and she whipped out her suitcase of recipes and the closest we could find is this one her Aunt Mamie wrote down for her a long time ago. She never made it herself because she doesn’t like chocolate, so I’ve never tried it either, but it might be what you’re looking for.
Chocolate Bread Pudding With Vanilla And Banana
Start by tearing up some old bread until you get about four cups worth. 4 eggs A cup of sugar (white) A tablespoon of vanilla A large banana, slice it up A cup of sweetened chocolate broken up. ***I’m guessing you can use chocolate chips***
In a large mixing bowl, put in your sugar, milk, eggs, and vanilla until it’s even. Then stir in the bread, chocolate chips, and banana slices until the bread’s good and soaked.
Line an iron roaster with a wet (not wringing) kitchen towel. Put your mixture into a reular sized loaf pan greased well and put the loaf pan on the towel in the roaster. Pour water into the roaster until it comes halfway up the sides of the baking pan and let sit in the heated oven for an hour, or until the knife slips out clean.
***I don’t know how old this recipe is, but I’m guessing it dates back to the twenties because Aunt Mamie died when Granny was a girl in the early thirties. Granny said she was a tall gal and mostly Indian blood and cooked on a wood stove.

I had some good bread puddin at our jackson hewitt banquet deal and the odd thing is i dont normally eat it. but this stuff was so good had some sort of brandy sauce

I think you're supposed to add enough milk to see that the bread gets good and wet. Wouldn't covering it all the way with milk be too much? Wouldn't want it to curdle up on ya.

Not if the bread is good and dry Toby. It'll soak up more than you would think. That's how all the spices get distributed so well. By the way, where the heck is the nutmeg in that recipe?? ;D
