I done lost a coffee can full of recipe clippings.
I'm looking for a recipe for hot chicken salad for sandwiches. Not hot as in spicy, but hot as in cooked. It's kinda like creamed pulled chicken. Only thing I can remember is you add crackers or bread crumbs to the chicken.
We used to serve these sandwiches as well as chicken & nood-noods at the athletic boosters concession stand when I was a kid. Guess football season's got me back in the mood for something yummy. Now they just serve hot dogs and sloppy joe.

When I worked for the Pennsville Fire Department, we made a chicken sandwich that consisted of boiled chicken seasoned the way you want. While still hot, you pulled chicken apart and used slightly thickened broth to hold it together. Hope this helps. Peg I done lost a coffee can full of recipe clippings. Thanks for your help. Peg, your recipe idea actually sounds better that what I was looking for. Mike's dad called last night and his "lady friend" (or whatever) just happed to be there. She had a recipe that is pretty close to what we made. I'm posting it over in the recipe box under "fowl > chicken recipes".
