This weekend is the "Big Game" and I've been given the "privilage" of cooking up all the grub for the party. Why me? My team isn't even playing! I may just have to leave the house at kickoff time to find comfort with other Vikings fans. ;D
I've never had the oportunity of eating at Buffalo Wild Wings, but I found this copy cat recipe for their famous buffalo wings and I'm going to try it on the guys Sunday.
I'm listing the recipe for the Spicy Garlic wing sauce. If you want the recipe for the medium or hot sauces, I've got them too. Just let me know.
BW3-Style Buffalo Garlic Wings
Should serve about 20, I figure 10 for a tailgater.
50 chicken wings, cut into drummies and flappers (100 pcs. total) <20# of of the frozen ones that come in bags>
2 to 4 quarts vegetable oil or shortening, for frying
Sauce:
4 cups hot sauce
1 1/3 c vegetable oil
1/4 c sugar
1/3 c garlic powder
2 tsp course ground plack pepper
2 tsp cayenne pepper
2 tsp Worcestershire sauce
4 egg yolks
2 TBS water
2 TBS corn starch
Make the sauce first (or ahead of time). Combine all the ingredients EXCEPT the egg yolk, water and cornstarch in a medium sauce pan. Heat sauce over medium heat until boiling, then reduce heat and simmer for 5 minutes. Remove pan from heat and cool, uncovered for 10 minutes.
While the sauce cools, vigorously whisk egg yolk with water in a medium bowl until the color is pale yellow. Then whisk in cornstarch until it is dissolved.
Drizzle the hot sauce mixture into the egg yolk mixture in a steady stream while rapidly whisking. (This might require a second person if you don't have great dexterity.) Whisk until thick, and creamy. Cover the sauce and chill it until it's needed.
Heat 2 to 4 qt shortening or oil to 350F in a fryer or heavy deep pan. Drop the wings into the grease and fry for 10 to 12 minutes, or until the wings are turning light brown. Remove wings from oil and drain on paper towels for 1 minute.
Place fried wings in a large plastic container with lid or a gallon ziploc bag. Add the sauce to the container/bag, close the container/bag and give it a good shake. Place the wings on a platter and serve with celery sticks on the side, with ranch or bleu cheese dressing for dipping.
