well thanks to Faith (she's a sweetheart) I have these two cook books that are filled to the brim with mega recipes. Although the quantities seem to be just about what Mom used to make up and rightly so as there were 12 kids to feed... What I would like to do is present a food that ya'll could choose from and I'll see what can be done about transcribing one or more of the recipes...being that this is my thread (at least I started it) I get to choose the first one and I think this time of year would be perfect for cookies... I'll post the recipes as soon as I get them retyped into a word format that can be pasted over here...

Scan them, save to a "Text" file via Microsoft word. Edit them to format the cop0y and past them here!

to start: Welcome to Mega Recipes: These recipes come from a cookbook Large Quantity Recipes Margaret E. Terrell or from Quantity Food Service Recipes Assembled under the Auspices of the American Dietetic Association; Adeline Wood, B.S., Chairman Most of the recipes posted in this thread will be from one or both of these cookbooks. Credit lies with these folks for the recipes. If there is a post script giving credit for a particular recipe or if the recipe comes from a different source not already acknowledged, I will post that as well. Please be advised that these are large quantities and most are quite old so be sure that if you are going to try one or more of them, that you gather and stage your ingredients and equipment prior to starting such an undertaking. Let’s start simple,
Ingredients:
Peanut Butter Cookies: Butter 1 cup Shortening 1 cup Sugar 2 cup Brown sugar 2 cup Peanut butter 2 cup Vanilla 2 tsp Eggs (whole) 6 Large Flour (AP) 1 1/2Qt (1 ½ #) Soda 1 tsp Salt 1 ¼ tsp
Directions:
Cream the Butter and Shortening, gradually add the Sugars, then the Peanut Butter. Cream thoroughly. Add the Vanilla and then beat in the Eggs. Sift the Flour Soda and Salt together. Add to the creamed mixture and blend. Shape into 1 oz balls. Place on a greased baking sheet and flatten with a fork. Bake at 375 *F/190*C for 20 min. Makes 100 2 ½ inch cookies T

If I thought it would get to you without damage, I'd send you my flatbed scanner. Haven't used it since I quit the family tree, and discovered that Walmart will put all my 35mm pics on CD when I have the film developed.

Another simple recipe and many folk's favorite: Oatmeal Drop Cookies 8# Butter and Shortening 10# Sugar 32 Eggs, well beaten 12# Rolled Oats 10# Raisins or dates (Variation any dried berry) 5# Walnuts, chopped 6 Qt Sour milk or buttermilk ¼# Soda 8# Flour ¼# Cinnamon ¼# Ginger ¼# Salt
Cream Butter and Shortening.
Add Sugar gradually and cream until light, using medium speed.
Add Eggs, Oats, Fruit, Nuts and Milk in which the Soda has been dissolved.
Add Flour which has been sifted with the Spices and Salt.
Drop from a #40 scoop on greased baking sheet and bake at 360*F for 10 min.
Makes 100 dozen cookies Yes that says 100 DZ (1200 cookies) Q

From what I could find out its a combination of butter and shortening...these are industrial strength recipes and need to be made in a industrial type mixer such as you would find in large institutions like schools and hospitals etc..
