Well, it's officially Spring..how can I tell??? it's demo time again ..doing the big cooking class with 12-14 DO dishes, a couple of one pot meals, a Dirty Ham (cooked in the ground) a Garbage Can Turkey, Pineapple Upside Down Cake, some Banana Boats, Baked taters etc....Last round we were asked to add more Chocolate...leave it to Girly Girl to fix that one..she's doing a Double Dutch Black Forest Fudge Chocolate Dump Cake...she has also put together a cook book or rather reconstructed our old one and added the new dishes to it...Plus we a demoing a foil dinner for our Cub Scout Leaders....including breakfast Sat and Sunday we will be cooking and serving 178+ individual meals in two days...I'll let ya'll know how it turns out along with a complete menu for both days...

Hopefully if I don't get "Drain Bamage" There may be pictures to go along with that report...want to take them for the cook book...and special step by step instruction sheets...wish I could get alholt of the video we made a few years ago..that was a blast....funny but informitive...

Please do get pictures TT. I have found a software program for doing recipes. I think that it is possible that self publishing is now doable both as a hard copy book and a CD. If you decide to do a book please consider allowing OCC to endorse it. Mandy got me thinking about doing an OCC book as well. I also am considering doing some "U tube" style snippets for demonstrating recipe preparations for presentation here.

Sorry folks, Only thing I got on the camera was a couple of pics of some of the first day's (Sat) breakfast and that weren't done outside...I don't have the complete menu in front of me at the moment but when I get it I'll try to get it posted up..maybe do a scan and cut and paste...if that's possible (for me) ...I can tell ya'll this much I was one tired puppy when It was all done and every thing was clean and put away... I would also like to take this time to congratulate Girly Girl on her most successful endeavor and her first time as lead "Quartermaster" she did outstanding folk's and I'm Damn proud of her...

Phil, She most assuredly earned her stripe with what she did..she re-organized the cookbook, planned the menu and bought 98% of all the vittles, and support products...and when it came down to scratch time, she stood the pace and led the way... Everyone on here but Faith will be wondering about that inside joke...besides, everyone that knows her makes that one or worse including her 2 boys not only all that, we had double the Cub Leaders we had expected...

well here goes the menu for last weekend
Sat Breakfast served 20 folks Omlets to order...had the folks put what they wanted in them on a paper plate then we did them up..
Home fries with chopped onions seasoned lightly with "season all"...
bacon and brown and serve sausage...
Lunch: ie the "Cooking Demo" Garbage Can Turkey Dirty Ham, cooked in the ground Red beans and Rice, in the 20" skillet Chili with Cornbread on top, in a DO Beef Stew with Biscuts on top, in a DO Backwoods Beans, in a DO Chicken with Stove Top Stuffing, 16 quart stock pot Chicken and Rice with Peas (Grean Stuff), in a 16 qt stock pot Turkey Veggie Soup, in 2 16 qt stock pots Mountain Man Breakfast, in a DO Lazana, in a DO in a Valcano Pork and Beans cooked in 2 Pineapples, wraped in foil Baked Taters, in foil Baked Sweet Taters, in foil Baked Apples, in foil Banna Boats, in foil Fruit Cocktail Dump Cake, in a DO Death By Chocolate Cherry Dump Cake, in a DO Apple Pie, in a DO in a pie tin Pineapple Upside Down Cake, in a DO in spring form pan Crusty Baked Apples , in a DO, set in mini tins. all but a couple of scoops was left of any thing..we served about 60 folks..

Sunday Lunch.....served 60, Pork Loins, marinated in apple cider (32 pounds) White Rice Mushroom Gravy Apples sauce Green Beans Fruit Cocktail Choclate Pudding
the Cub Leaders had foil dinners for lunch Sat (22 of them) which consisted of a chicken leg quarter chopped up taters, celery, carrots and onions...the Webelos Leaders had the same for supper Sat (16 of them)...

Oh, heck, I forgot to mention the 15 boys from Girly Girl's troop that cam[rf out over the weekend...they are new scouts and she gave a mini demo on how to do omletts in a zip-loc and how to cook tube biscuts as bread sticks over hot coals...

Had a ball, I really enjoy these things,,,Wander Lou is already planning next years menu...she's a trip...Plans are to make these dishes throughout the year and take pictures of the process and finished product and incorporate them into the cook book...

How about breakfast for 135,,,scrambled eggs, sausage, french toast with maple syrup and juice (apple and or orange)...BSA holds fishing derbies throughout CT at different Camps for Scouts and thier families every year on the trout opener so we provide them with a "Fisherman's Breakfast" it's simple and fairly easy...and gives them a li'l extra in the deal....they seemed to really enjoy it they all gather at the dinning hall and we serve it cafiteria style...they grab a plate and we pile it on ;D ;D ...it's a pleasure to watch these kids pack away a good breakfast before going out..one Dad said that he can't get his kid to eat anything in the mornings and was suprised when "li'l Billy" wanted seconds ;D I guess it was the spirit of the Day....I don't evn know how many gallons of scrambled eggs we use, but the went through about 40 pounds of link sausage and several hundred slices of french toast....

Nope, no taters..our leader desided that if we serve Frnch Toast then we don't need taters...I don't know.....we have, at the camp, a 24 x 40 flat top grill....makes cooking things like eggs and taters real easy...french toast was pre prepared so all we did with it was lay it out on sheet pans and pop it in the warmer at 4:30 AM set at 175* F...took it out at 6 and it was all hot and, for pre done stuff, actualy pretty good....

Dang, this year done flew by and it's alraedy time to get the DOs out and make sure the seasoning is still good..time to shop big and cook large once again...a special guest cook will be joining us this year after about 5-6 years off...heck of a lot of fun cooking with the "Great Horned Owl"...we did these demos together for about 7 years before he took his break...Girly Girl told me that I had both morning meals and the cook's super on Sat night...Dang, I really need to get pics this year... Figure Sat AM will be: ETO...(eggs to order) Sausage or sausage gravy Corned beef hash Homemade drop or cut biscuts with butter and jam maybe bacon juice and of course that never empty pot of Mountain Grown... Haven't thought out Sunday btrakfast yet but it'll be of similar fair Still looking for help
