My sister copied this recipe from the internet and made them for her Christmas party where she works. She saved some for me and they were great. A little on the small side, but tasty!
3 large egg whites 1/4 tsp. of Cream of tartar 1 cup superfine granulated sugar 1/4 cup unsweetened cocoa powder (sifted) 1/2 cup miniature semi-sweet chocolate chips
Chill mixing bowl and beaters for 15 minutes preheat oven to 250 degrees and line cookie sheets with parchment paper
Beat egg whites and cream of tartar on high speed until soft peaks form. Add sugar a tablespoon at a time until it's all in and melted into the meringue. The meringue should be shiny and form stiff peaks.
Sprinkle sifted cocoa powder over meringue and fold in with a spatula, then fold in miniature chocolate chips.
Drop these cookies by a scant teaspoonful, placing cookies about an inch apart. Bake about an hour or until stiff and dry, but leave them in the oven another hour or two to further dry out the mreingue.
Yield is about 5dz. bite sized cookies.
