::)Please I need ideas on how to preserve mushrooms. My mother's neighbor goes dumpster diving and I have acquired approximately three gallons of Green Giant white cap mushrooms. We all like mushrooms, however that is a bit much for any family.
I need ideas on how to preserve them so that they will be usable either by freezing or canning. Any help would be greatly appreciated.

There's nothing like a big feed for batter fried mushrooms for supper!!
Perhaps sauted and freezing them for future use. MIL just freezes them whole as they are.
From experience, commercial mushrooms cannot be canned anymore!! The mushroom houses started "bleaching" them or something in the early '80's and every single jar I have tried to can since then will flat spoil. Don't know if this applies to making marinated canned mushrooms or not. Have not tried.

Peg are they already canned? If they are fresh in the cello wraps I think I would dehydrate them and then freeze them in zip lock freezer bags. They ought to last a while like that I'd think. Spread them out on lpaper towels on cookie sheets and set them in the oven at about 200 degrees with the door cracked slightly. Shouldn't take more than a couple hours to draw them down to leathers. Then toss them in a ziplock bag expell the air and freeze them up. I'd think they would be good for six months anyway. My neighbor just air dries his and freezes them. To reconstitute put them in cold water for a half hour or so.

I dehydrate mine then seal them up in a food saver...just used the last of the ones I did up about 7 years ago...to rehydrate I'll use cold water or a good red wine..with the food saver you don't have to freeze them after wards they'll stay good for a very long time stored just as they are in the bags.

I got to get me one of those gizmos. It would really come in handy preparing things for reenacting I think. Have you stored bread in them TT?

Vacuum packing bread might not be the ideal way to store it even for a short time...they do make them plasic trays that you could put it in and then draw the air out (or some of it) without mashing the bread completely flat...never know until we try ;D
