I make my own sausa using the following: Green Tomatoes(diced) Firm ripe Tomatoes(diced) Garlic(chopped) Green pepper(diced) Onion(diced) Salt Pepper vinegar I put all the above except vinegar in pot and simmer till all are happy with one another.Remove from heat and cool. Add vinegar and stir,rest, and stir .Re season with salt and pepper to taste.I then put the mixture in Mason jars and put in the frig. In my case it has never been there more than a week, so I have never worried about spoilage. Sorry can't give amounts and every batch is different,but all good1 I like it with Frito scoops. snake-eyes

Fresh, Mild Salsa for Eggs and Fowl
2 medium yellow tomatoes, skinned, seeded, and finely diced 1 small "Tequila pepper" (Purple variagated color) cored seeded and with the "inside" layer of skin removed, and finely diced 1 medium Vidalia super sweet onion, finely diced 2 firm plums or apricots skinned, seeded, and finely diced 1 medium head fresh crushed garlic 1 Tablespoon Lime Juice 1 Tablespoon Lemon Juice 1 Tablespoon finely chopped cilantro salt and pepper to taste (For heat add a small piece of finely diced Habanero pepper)
Combine the "finely diced" ingredients, press down and allow the juices to cover the fruit and vegetables. Allow to refrigerate overnight in a covered container before serving with egg dishes, fowl, seafood, or plain rice. The very mild flavor of this salsa compliments these dishes well. There are no bitter or sharp acid notes in this salsa even with the Habanero added.
Summer Fresh Salsa (Very Refreshing)
1 large tequila Pepper Medium Dice 1 Medium Vidalia Onion Medium Dice 1 Medium Ear of Fresh Corn Cut From Cob 2 Large Fresh Yellow Tomatoes Medium Dice 1 Medium Cucumber Peeled, Seeded and Diced Medium 1/2 Cup Papaya Diced Medium 1 Tablespoon Fresh Chopped Cilantro Leaves 1 Tablespoon Garlic Powder or 2 Cloves Fresh Chopped Garlic Salt and Pepper To Taste Dressing 1/3 Cup Cider Vinegar 1/3 Cup Water 1/3 Cup Extra Virgin Olive Oil 2 Tablespoons Fresh Lime Juice
Combine the vegetables in a large bowl and mix the dressing in another. Season the vegetables with salt and pepper as desired and add the dressing. Combine well and taste for seasoning adjustments. Do not make final adjustments until well chilled. Cover and chill for a minimum of two hours. Serve with your favorite foods as a side salad, relish, salsa with tacos or tortilla foods, or dip with corn chips. This goes particularly well with fish, chicken, eggs, hot dogs and hamburgers.
Salsa for Filipino Style Foods
1 medium sized sweet onion finely diced 1 large red ripe tomato peeled, seeded, and diced 1 whole head of garlic peeled and finely diced 2 Tablespoons of rice vinegar 1 Tablespoon of soy sauce 1/4 teaspoon sea salt 1/8th teaspoon freshly ground black pepper
Combine the ingredients well and chill. Serve with white rice, eggs scrambled Filipino style, dried fish, or adobo chicken or pork.
