Caught a 300# Bore in my hog trap. Called a Friend who had back surgery that went bad, now he gets around with a walker. and three teenage boys at home. Boy did he and his boys jump at it. Now here is how he worked it up. First he stopped and picked up about 200# ice. Then the boys shot and blead, then them three boys hung that big boy by the head and 10 minnets later we had a skint hog. Next gutted then the old man had a mix made up. 1 QT vinegar 1 QT water 1 cup tender quick 2 6 oz bottles hot sauce He took the hams and using a marinating needle shot them full of the mix as well as the rest of the meat. then placed the meat on the ice then took a rag and wiped the rest of the meat with what mix he had left. and covered with ice. Monday evening he put the meat on a smoker on low heat all night. Tue he boned the hog out and ground the whole thing. He brought me some ground and a package of sausage. To my surprise that meat was dang good. I told him I might Just Not call him next time

Now that's the way to handle a varmint! You know that vinegar and hot sauce, I assume "Texas Pete!" , is a real good way to treat fatty meats.

I always wince when I hear about hunters that passup shots at big boars or just shoot and take the turshes If handled properly, even the biggest old boar out there can be quite palatable if not down right delicious! I just read a report that within the next five to seven years, feral swine will be inhabiting forty-nine of the fifty US states and all of our territories. Apparently, Alaska's too damned cold for them. Great eating and a ton of fun to hunt. I think I'll bring along a mix like your buddy did and inject the meat before I wrap it. I usually do a rub prior to cooking, but I wanna trry this way and see if it's any better.

Paws, You ever seen any in your neck of the woods??? I have seen a few while deer hunting in the Logan area.My son got one 3/4 years ago with a slug gun,that might have dressed out at maybe 125#. Those wild puppies are very lean,nothing like the domestic ones. Another thing,pigs ain't slow.I think in a short race they would beat a horse and definitely a man.IMHO snake-eyes
