Thanks for the welcome and howdy to all. Phil and I had the good fortune to meet Saturday at The Athens Farmers Market "Squash It" cooking contest, I believe following my inquiries as to who made the squash relish. Phil, I hope I have the item right and it was tasty; served on a cracker and sausage slice. I am a regular at the market as part of our efforts, through the window of a marketing and distribution company, of strengthening local food security and building community resiliency. It is a way that I can use my cooking knowledge and passion to help source quality production, value add to it where appropriate( like dry aging grain finished Angus, aging and ripening cheese, roasting coffee, pickling jalapenos, etc.) and connecting the products with locally owned restaurants, stores, office service, and direct promotion at farmers markets; all this with the hope of redefining a price that will bring producers a living wage for their efforts. Why would us volunteers do such a crazy thing you might ask?? Well, we see some very uncertain times ahead. We need to eat. And we define food security as being able to feed ourselves from locally produced, non emergency food sources, on an open time line. Yes! we also promote individual gardening. Anyway, this is all one leg of six (health/wellness/spirituality, air, food, water, shelter, and education) of an attempt at building survivability through the tough times and challenges predicted for this century. This tired ole body doesn't have much left, but I suspect I can try something to leave a better future for all our grandchildrens' grandchildren. The market presence is an opportunity for us to regularly drill our mobile field kitchen and communications response capabilities, with an emphasis on systems improvement strategies and building active collaborative relationships in the community. Nuf of this for now. Dinner to fix, solar battery equalize charging to tend.
Again, greetings to all, Constantine
