Twice Smoked Ham w/Sweet Jalapeno Honey Glaze 12 to 15 lb pre-cooked Smoked Bone-In Ham, I prefer Pettie Jeans Ham’s 1 cup Arkansas Pure Honey ½ cup Brown Spicy Mustard ½ cup Coarse Ground Black Pepper 1 tblspn Olive Oil Brush ham with tblspn olive oil. Rub black pepper all over ham, covering all the meat area. With spatula smear mustard over ham meat area. With same spatula pour honey over mustard, with spatula coating ham over meat area evenly. Place ham on sheet pan Smoker fire started in smoker, the @ 225 degrees place ham on sheet pan in smoker. Total cooking time is 3 hours, every hour adding a 5 to 8 new charcoal & 4 to 5 chunks of hickory to the fire. After cooking time in smoke is over, place ham in pre-heat oven for 350 degree’s, cook for another 1 ½ hours. Every 20 minutes brush “Jalapeno Honey Glaze” on ham. After cooking is over, place ham on counter. Brush last coat of “Jalapeno Honey Glaze over ham & let rest for 30 minutes, this is if y’all can hold off from picking at the meat. I have the same problem here at this stage. Slice off ham , this is one of the best tasting ham’s y’all will ever taste. Jalapeno Honey Glaze ½ cup Butter 1 large Jalapeno Pepper, seeded & minced 1/4 cup Honey, I prefer Arkansas Pure Honey Heat butter in sauce pan, until butter is melted, add jalapeno pepper. Bring to simmer, stir in honey. Brush over ham after removing from oven out of oven in smoker fire pit honey, mustard,pepper mustard black pepper
