Happy post 4th to all.....I had the whole family over, spent 14 hours creating a beautiful pork shoulder took pictures and can only show one.....My wife was using our new video camera, and mistakenly instead of setting up for pictures, she set up for video, so all my documented progress through the day is lost.....I do have one picture at the table.....It shows the pulled pork, home made baked beans, hamburgers, hot dogs, coleslaw, drinks and home made potato salad.........The little face to the right of my wife is my grandson Christian Joseph Korot....... .

OH Tobey, you should get here and see what I did!! LOL..... Got about 16 lbs of butt, all rubbed up and in the fridge .....I have a lot of cooking to do between now and Sunday and I'm all freaked out and tired right now......The butt goes in tomorrow morning at 6 A.M, and I'm hoping for a good 14-16 hour cook..... The baked beans, macaroni salad and that new coleslaw ( Memphis style ) I'm using needs to be done by Sunday also.......This all has become a family tradition each 4th, and this year, I'm cooking for at least 16...... And to you Toby and everyone else, have a safe and happy 4th of July...Don't do anything I would do, but if you do, name it after me y'all!!!! LOL ;D ;D ;D

I think the smoker is why Koot hangs on! Boy done embalmed himself!! Koot try that horseradish cole slaw recipe I posted, it am some kind of good. ;D Never did gut my butt. Ain't eating a whole lot and food is going to waste now as opposed to waist! Read in at 202.2 pounds this morning. First day in a while I can say "I feel good."

Phil, the bun is in the oven as they say...Put the butt in at 6:30 A.m and just sitting back here and watching the smoke...The coleslaw you posted is next on the agenda, but I'm using the Memphis slaw I posted prior to that....I like horse radish, and this slaw has a little bite since it has a chopped up jalapeno in it....It is unusual to say.... Good work on the weight....I've been too sedentary myself because of my back and legs......Enjoy the 4th and don't do anything to get you in trouble....

Here yah go Tobey........ Memphis style coleslaw.... The ingredients are , 1 medium cabbage,shredded, 1 onion, 1 carrot, 1 jalapeno pepper with seeds removed. To the cabbage add 2 TSP salt, and let sit and drain for about 1 hour... Rinse then spin dry....Then add the chopped onion, carrot, and jalapeno.... Liquids are 2/3's cup light brown sugar 1/4 cup mayo 1/4 sour cream 1/4 cup Heinz chili sauce 1/4 mustard 1/4 cup apple cider vinegar 1 TSP celery seed.... Bring all liquids to a boil whisking so no lumps.....When it reach's boil remove immediately add to cabbage and stir....Cover and place in fridge for at least 1 hour, or for us over night...Serve and enjoy..

Thanks Steve! I'm a gonna give it a try, but prolly not for tomorrow, Granny's already got dibs on the cabbage for her cole slaw tomorrow. When I do, later on in the week, I'll let ya know how everybody likes it.
