Southern Baked Macaroni & Cheese with Bacon 6 slices Bacon, cooked chopped. I prefer Pettie Jeans 6 oz or 1 medium pkg Macaroni, shells or elbow OK ½ lb Sharp Cheddar Cheese, grated ½ lb Pepper Jack, grated ½ lb Velveta Cheese 1 tespn Dried Ground Mustard 3 Eggs, beaten Milk Salt & Pepper, to taste. Cook macaroni till it’s getting soft. Drain the water, add macaroni to baking dish. Add ¾ of the grated cheese, dried mustard, bacon bits, beaten eggs and just enough milk to bring up a liquid level, the macaroni should still be hot from draining. Stir well mixing the above ingredient together. The cheese and milk, egg mixture should be blended. With pre-heated oven @ 350 degrees place baking dish with macaroni mixture. ,cover bake for 25 to 30 minutes. Remove foil from baking dish add remainder of cheese and bake for a additional 5 minutes or the cheese is fully melted. along with the meal was Rib-eyes grilled with Cajun Chive Butter, Mix Greens(Collar & Mustsard) & Red Potato Water Chestnut Tator Salad

Don, Now that sounds real tasty.I printed it off and will pass it along to the Boss.She likes baking up that type of fiddles.I just enjoy eating them.I am more of a grill and fry type cook.Although I do have my oven moments. snake-eyes

I use left over ham chunks (when I have them) instead of the bacon (lots of them) but that's a danged good recipe...might try it for Girly Girl using her rice pasta (Glutin Free) she's not a big ham fan...

We ain't passed a major holiday around here that Granny doesn't make that very dish. She also substitues leftover ham for the bacon.
I LOVE it!!!! ;D
