Bacon Favored Potato Salad 5 to 6 Large Potatoes (approx 6 lbs) , peeled, boiled, cooled & chopped ½ lb Bacon , fried crisp & chopped, keep the bacon drippings to drizzle overand mix in salad (use as much as you like). 1 tblspn Garlic, peeled & minced 1 cup White Onion, peeled & chopped 1 cup Dill Pickles, chopped ½ cup Sweet Pickles, chopped 1 cup Celery, cleaned & chopped 1 tblspn Crystal Hot Sauce ½ cup Yellow Mustard Mayonnaise to your taste, approx ¾ to 1 cup 1 tblspn Tony Chacheres Creole Seasoning Salt & Pepper to taste. Peel, boil potatoes, remove from pot let cool. Chop into cubs. In large bowl add chopped potatoes & drizzle bacon drippings over the potatoes, stir in together to coat potatoes. Add all other ingredients. Be careful not to mash the potatoes while you mix all ingredients together. Mix well. Season to taste with salt & pepper. NOTE* “Bacon drippings should be warm, liquid state to incorporate with potatoes”

I like to add bacon to my pasta salad too, or ham.

Don, Your recipe kind of reminds me Hot German potato salad, which I love dearly. snake-eyes

Snake I thought you were alergic to mayonaise. Yes it does take on some of the characteristics of German potato salad doesn't it. HINT: It is a pain in the butt, but; it is better to boil the spuds whole and in the skins to help prevent them from water logging. Peel them and cut them while still hot and mix while warm to absorb all the spices and goodies in the salad.

Paws, Nope,I love mayonnaise,but hate Miracle Whip...Only thing I know I am allergic to is coconut.I love hot German tater salad! ;D
