Last week I received my new smoker....Its the Masterbuilt 30 inch smoker.....Well today was the trial, and I smoked a prime rib roast...The rub was simply a half cup pepper, a tablespoon of crushed garlic and 1/4 cup of olive oil.....The smoker did what it was supposed to do, maintaining its temperature during the entire cook.....The pepper was too heavy for some at the table and will not be used in that amount again....I used apple chips for the smoke...Sorry there were no leftovers.......

Yeah...other than getting a little heavy on the pepper, it sure sounded good!!! Let me toss this little idea out to ya...if you ever do a nice lean pork loin, try to find maple chips to give it a rich old-timey flavor. I smoked a couple of pork tenderloins over maple woodchips that last Christmas before Mother passed on. She thought it was just wonderful! I rubbed it with a mixture of black pepper, red pepper, brown sugar, and Mrs. Dash Table Blend. Also, I had slipped some small garlic cloves in the middle where I slit it with a filet knife to get the rotisserie skewer through it. It turned out to be delicious! I'm lucky enough to have two different variety of maples on my place and save the prunings for use in the smoker.

Sounds good too me Bill, Con wants to make some honey cured bacon, so the next time I hit my butcher, I'm getting a couple of pork bellies.... I have some of the butchers maple cured bacon, and it is great.....Here in the Northeast, wood is concidered a premium,and if you dont have a wood lot on your property, you'll be paying upwards of $300+ for just a simple chord of wood.....Then the dealers get crazy money for wood logs or chunks......I've investigated it and its nuts....I was looking for some pinion wood for mosquito control while I'm BBQing or even smoking, but it costs a small fortune to get it shipped and the way they do it is , lets say 10 12 " inch logs for $25-30 or a one cubic foot of chunks, but there's a $35 + shipping charge

Hmmm! Steve, I just had a thought...what if I take some pinon rosin and mix it with paraffin and make it into a "bug candle?" You melt the pinon rosin and the paraffin together and pour it into an empty, washed tin can with a wick in the middle. The aromatic rosin is what does the trick. Would be cheaper to ship and would have the same bug deterring effect. I will try to gather some more rosin next time I am out in the hills and try it out to make sure it works like I think.
