I got a few bushels of cucumbers from a lady friend who owns a vegetable stand in Ocala. So Mom, Granny, and each of the kids have been busy pickling and canning them.
We've got bread and butter pickles (Faith's recipe), dill pickles, refridgerator pickles, sweet n sour pickles, and garlic pickles.
Thay've used a bunch for cucumber salad, sammiches, and such, but we've now got sixty eight jars of pickles and another bushel left to can, lol.
The other night, Mom and Granny were still at it at four o'clock in the morning. But they were laughing and grinning and it was good to see them having fun! ;D

I know this will sound insane,unless you have tried them. Quarter them puppies up,let dry a bit,then batter up as you like......Then deep fry ......Yes I said deep fry . This has been the rage at Ohio county fairs for at least 15years,that I know of. Don't knock it,till you tried it.Enjoy

Yep. Canning season has officially started....Like did it ever end? I'm planning of making a mess of okra pickles this year. Also want to do up a couple hundred qts of pickled beets. That is if I can find the beets around here. Last years crop sucked.
Did 63 qts of applesauce Tuesday/Wednesday. Still have another bushel of apples to do something with. Made Martin and his buddy a big pan of oatmeal-pnut butter-apple bar cookies last night and had fried apples for breakfast.

Granny gave me orders to procure her a mess of yellow squash to pickle bread n butter style.

Man oh man, the garden went nuts wit the squash, so now Mom, Chicken and Granny have been pickling yellow squash. A couple different types of pickling flavors. About eleven quart jars worth. Chicken cleaned and pickled six quart jars of peppers, sweet peppers and hot. Now, they're eyeballing the blackeyes next picking to start canning them. Putting up lots of groceries. I'm taking Dad hog hunting this weekend at a Memorial Day event with a lot of good folks at Tiger Island. so I expect to be putting away some fresh meat as well.

I came home tonight and found a big jar of watermelon rind pickles waiting for me. When them gals get the pickling fever, they gets it pretty bad! Granny put her order in for me to get her a couple of bushels of field peas to can and told me to take the boy out for more blackberries. I jst smiled and told her, "Yes, Ma'am!"
