I never been much on pealin' my taters. Whether I french fry, home fry, boil n smash, or bake. About the only time I peal 'em is if I'm making tater salad.
I always heard that the vitamins and healthy parts of the tater was in the skin, so I remove any eyes and wash 'em REAL good.
What about ya'll?

I don't peel ANYTHING! Got rheumatism in my hands and bad carpel tunnel to boot. Peeling - or for that matter, just trying to write - kills me. Part of the reason I got rid of Moose is I can't hand milk anymore. If I'm canning pears or apples, I try to time it so Mike is home to do the peeling for me. Even for tater salad, I boil 'em in their jackets and slip the 'em like I would beets. Personally, I think the best part of the tater is the skin. I'm not too particular on the washing part though. A quick rinse is good enough and all the eye I remove is just what I can snap off.

I loves me some boiled taters. Wsh 'em off and toss them into boiling water until they are tender. Put 'em in the plate and squis ;Dh 'em down with the heel of my hand. Salt 'em, pepper 'em, butter 'em and mix 'em up with your fork kind of mashin' as you go.
