One of the members over at NAHC in the game cooking forum said he takes his game and sears it first,then places the game in a marinade for what ever perod,then he takes it out and cooks it. My question to him which was not answered was...if you sear the meat,arent you sealing it in ,therefore the marinade shouldnt hold.....I later was told to ask you,so since your my new cooking Guru....wazzzuuuuuuppp wit dat......am I right or it just doesnt matter? ;D

Awww, I don't think it would be the best practice. Seems somewhat counterproductive to me if you are using a marinade. Marinades are for tenderizing and flavoring. Searing is for crisping the exterior and keeping the juices from escaping and drying out the meat during cooking. Seems like the best approach is to get the liquids inside first then sear the meat. Although I can see that "some" small benefit might be achieved; just not full benefit. Remember cooking ain't rocket science, only chemistry! ;D

Alton Brown has conducted a controlled scientific study and proven that searing meat does not cause the meat to retain moisture. It does however improve the flavor of the meat. So, since no seal is actually occurring, it would appear to not matter when the meat is marinated!

Wish I could help out with a first hand experiment, but I'm fresh out of venison and all of my pork's been sausagized.
Three more months to go and I'll get some venison to test it on. ;D

You didn't remind me! All of the venison is gone again and once again, all of the fresh pork has been sausagized. Three more months to go and I'll have some new venison to test out these theories. ;D

Well Toby, Brian up and sent me a crossbow about four years ago, maybe three, cause he couldn't think of nothing better to do with it. And preacher look at how old Brian done got blessed. Now old Toby done been giving us free advertising in the magazines so I figure he will get a blessin' too.

Searing may actualy open the meat up a little more and allow a marinade to seep in a little better. I know that if you poke a hole in meat then cook it the hole gets bigger so something like that may be in effect. I've been blessed out a time or two myself. ;D
