It's not here yet but very soon it'll be time to pickle a bunch of green tomatos. Granny used to do it but Momma don't remember how. I have some friends but cajuns won't share either. They are green tomatos pickled and canned. Some sweet some peppered. I love them both. Anyone have a recipe?

I stole this from Debbie's Country Cooking:
Green Tomato Pickles
2 quarts green tomatoes, chopped coarse 2 cups onions,chopped coarse 2 1/3 cups sugar 1 Tablespoon salt 1 teaspoon celery seeds 1 teaspoon red pepper flakes 2 cups apple cider vinegar
Put all ingredients in a stainless steel pan, bring to a boil, boil for 1 minute. Can in hot sterilized cans according to proper canning procedures.

Guys, I dont have a recipe for yah, my wifes friend makes me mnay jars of pickled items......but I think this could be a good idea to discuss proper canning procedures.........it would be a great help since the summer is here and there are some early crops that can be picked soon...

He isnt kiddin bout havin tomatos soon, we'll prolly have them into the winter as late as these plants came up but they are definitly hearty lil plants. He isnt cannin all my green tomatos either now! gotta have some for sketti sauce!

Brian , Here is part of 7 I found in an old canning book I have .
GREEN TOMATO PICKLES
2 qts. sliced green tomatoes 3 tbsp salt 2 c. vinegar 2/3 c . dark brown sugar 1 c. white sugar 3 tbsp. mustard seeds 1/2 tsp. celery seeds 1 tsp. turmeric 3 c. sliced onions 2 large ,sweet red peppers, chopped 1 hot green or red pepper, chopped
Mix tomatoes and salt . let stand about 12 hours. Drain. Heat vinegar , sugar , and spices to a boil; Add sliced onions and boil gently 5 min. Add the drained tomatoes and peppers ; Bring slowly to a boil. Simmer 5 min. , stirring occasionally with a wooden spoon. Pack into hot , sterilized jars. Be sure syrup covers vegetables. Seal at once. process in boiling water bath [ 212 * F ] 5 min. Makes 9 half pints.

GREEN TOMATO PEPPER RELISH
1 Gal. green tomatoes 2 medium onions 4 large green peppers 2 large red peppers 1/2 c. salt 1 tsp. mixed pickling spices 3 c. vinegar 1 c. water 2 c. sugar
Wash, chop and mix vegetables , peel onions and discarding pepper seeds.Add salt and let stand for several hours or overnight.Drain liquid and discard.
Tie spice in a bag ; combine all ingredients and simmer 30 min.
Ladle boiling hot mixture into hot, sterilized jars; seal at once . Process in boiling water bath [ 212 * F. ] 5 min. . Makes 12 pints.

Steve has a good point here. Proper canning/preserving procedures are a must and in no way can you skimp on them. Even something as simple as a vacume sealer can be dangerous if not used properly.

That is correct one must know how to; Or the proper way too can. As these are only the recipes . Canning food properly is a task that needs to be followed to the T!!!!

Pickles are pretty much all either brined or cold packed. Cold packing requires blanching at a boil for maybe a couple minutes then packing immediately into sterilized jars and adding liquids then sealing. Hot packing requires actually cooking the food in the jar after sealing. Of course brining is merely submerging in a sterile solution of salt and vinegar for a period of time. Ohio State Agricultural Department has some good information available.

Ms Kathy is our resident expert on things like canning and pickling. She has a recipe for "Mock Strawberry or Rasberry Jelly" That is fantastic and uses green tomatos. Like I said it is Fantastic and is also a good way to use up those green tomatos that we all have right before the frost. I'll post it as soon as she gets it out for me. Dhe also makes some real good pickles, both dill and bread and butter that are "Crockless" . She does them up and cans them all in the same day or 2. I'll try and get those recipes too.
