I have heard a lot about cooking with beer and I was wondering if you can substitute near beer in recipes. Dale

Absolutely! Got to tell you though, beer never was one of my favorite ingredients. I reserve it for sausages and not a lot more. For "beer can" chicken, I use Coke! ;D I do not use it in Chile unless I use a dark beer; then it adds flavor. Pilsners are pretty much useless to my way of thinking when used in cooking because the flavor is not complimentary to most foods when cooked.

I insist on one particular brand of beer for my Chicken Chipotle...Tequiza...a Mexican inspired beer from Anheuser-Busch that derives it's unique taste from agave nectar and a twist of lime. Otherwise...to get the Chipotle to taste right you have to add a jigger of tequila and a spritz of lime. The Tequiza just makes it simple and saves some steps. Bet those ragamuffins frown on barbequed pork too...bunch of infidels! ;D I would not do well in that culture. The fat man loves pork! He insists on cooking with beer. He rides one of those devil machines called a Harley Davidson. And in his lifetime, he has probably met all 72 virgins and may be the reason they no longer are! (jk) But that's the way I'd be viewed in their society.

Partner I know a few guys in the UAE who drink. I taught a few DOD courses to a small group of Patrol Boat Commanders in Florida a few years back who told me that when they get really bored they round up a few cases of beer, some whiskey, and a few goats and head a hundred miles into the desert where they BBQ until the supplies are exhausted. They partied hearty while in the US too! One of the boys is from Abu Dabi from a very wealthy family who is into international freight. Getting Christmas ;D cards from Muslims was one of the high points of my career!

Paws, I know I'm bit late posting on this subject,but better late than never. I know most of those here may know this,but for those that don't.When cooking with spirits,wine or beer,most or all the alcohol is cooked off in the cooking process. Unless added when served.Like a touch of red wine or sherry in turtle soup.You actually get all the taste of what you use without the alcohol.Just my 2cents. snake-eyes

By the way when using high alcohol content for like a flam'be never pour out of the bottle and remove the vessel from the heat before pouring then return it to the heat and tip for flaming or ignite with a new flame source. (Safer!)
