Little Miss Muffet, sat on her tuffet, eating her curds and whey. Along came a spider, who sat down beside her, and asked, "What's in the bowl bitch?"
Well, I figured out what's in the bowl and although it nearly made me gag, the kids LOVE the stuff with a little sweetener.
I monkeyed around finding recipes and such for using whole fresh milk from our goat, Annabelle. She's our only milker right now, but she's putting out almost two quarts a day. So, I came across a recipe for cheese curds and gave it a try.
Curds & Whey (there was no author name available)
1 gallon of whole fresh milk or 2% hemoginized milk
1/2 cup of vinegar
1tsp of salt
I skimmed the cream off the top of the milk and set it aside for the kids to make butter with. Then I measured out a half gallon of fresh milk an cut the vinegar and salt in half too.
I heated the milk and vinegar to almost boiling and the curds began forming. Once the curds were formed and seperated from the whey nicely, I poured it through a clean dish towel and let the whey drain into a big bowl. The curds I put into a seperate bowl and sprinkled the salt over them and mixed them up gently so as not to break up the curd and make mush. It turned out white and soft, kinda like a riccota cheese, but with a different taste.
I took a bite and nearly gagged, but the kids loved it. They thought it needed sweetening, so they grabbed for the sugar and maple syrup and poured a little of the whey back over it and mixed it up and they had the whole mess cleaned up in no time. ;D
The whey, Fred drank, but I read where it's really good to use in bread or biscuit making, so I plan on next time using it in a batch of biscuits and see how it goes.
Now that I know how to do it, I'll take some pictures next time.
