My little girly pal Tonya done up and smited three hogs already this season, and Dad and I accounted for a couple more, so we gots plenty of dead hog flesh to worry about. Been planning all along to make sausage with the surplus, but we always used commercialy prepared mixes. Well, Tonya sent me e-hunting for sausage recipes online in order to build our own mixture rather than pay the extra for the pre-made stuff and here's what I found. www.3men.com/sausage.htmGonna try the Chipolte and Bratwurst recipes first and see how they turn out. Toby, I posted a few recipes on here, they all came from "Bruce Aidell's Complete Sausage Book" and I can highly recommend it. It has around 60 recipes for sausage and a bunch for meals using the sausage. The recipes run from 2 to 5 lb batches so you can make up a small batch first to see if you like it. I ought to have known to look here first, lol! Thanks, I'll give it a shot. Dad ground up about five pounds this morning and mixed it with the last of the commercial seasoning he had. I didn't try any, but it always turns out good. Chorizo, huh? I'll give it a shot!

I promised the boys I'd make up a freezer full of breakfast links this season.
What the heck has made edible collagen casings jump in price so much in the past 2 years?? I went to order some 22mm and they're up $3 a casing!
Anyone know of a place selling them for less then $6.50 per casing and doesn't charge a small fortune for s&h, let me know.
