Dad and I hauled fourteen keeper sized (between two and eight pounds) of butter bellied kittey-fish onto the dockthe other night. The Withlacoochee River's real low after having a very dry rainy season thus far and the fish were really biting. I wasn't very pleased when dad pitched all the panfish and speckled river cats back in the river. "Them butter cats is the best eating," he says and then later, "didn't think you felt like cleaning all them other fish this late at night." Oh well, we got fourteen in the freezer, lol.

Sounds mighty good fellers, and TT, I might just try that next time. But this ess got lightly salted, liberally coated with corn meal and drug through the grease! We also whooped up a mess of hush puppies and a big pot of grits to go with 'em. Normally, a can pork n beans and a big vidalia onion would round it out, but we didn't have neither one handy, but it were still mighty good. Dad and I washed ours down with perculator coffee and the rest of the bunch got by with sodas. They weren't no leftovers and everybody walked away with a full belly. I tell ya; them butter cats is some fine eating!

Sage?...sage is a flat herb..need some zip if ya gonna herb it up..I suggest make up some dill butter and put a couple of dollops on it after you turn it..it'll melt in and over the fish as it cooks on the underside...then just prior to taking it off give it a squeeze of lemon juice...

No, catfish is very mild and sage complements it well; same with trout.

Taking that big 20' Alumicraft with his 115 Mercury to Lake Panasofkee Thurday. Shellcrackers are going to start bedding soon and we figure to tear 'em up! Gonna be pitching worms and cickets to 'em. I'm lobbying to just leave the boat in a rented slip right there instead of hauling it back and forth and setting out a few trotlines. A qick way to load the boat with some catfish and that lake is surely full of big fat butter cats, speckled cats, and a whole lot of them blue cats...all gooooooooood eats!!!
