...went down to edgewater in cleveland sat even with 5 other guys and we caught over 400 smelt... or as I like to call them "fishfries"... We caught them using poles with 3 #10 hooks topped off with 2 maggots on each hook... To clean these little nummies I use a pair of scissors to take off the head then its down from there to the ol' poop shoot and a quick thumbjob from the back of the inside spine to where the head use to be and your done...
I mix 1 cup flour with 2 heaping TSP of Lawry's seasoned salt then shake the fish in a plastic bag till well coated and set them aside so the mixture adheres to the fish... then I mix 1 cup beer with one cup pancake mix to which I add 1 beaten egg and several good hard shakes of the ol' worcestershire sauce... dip flour coated fish in the batter and toss into 300 degree heated peanut oil and when golden brown enjoy... any batter left I'll toss in some onion rings and have at it... The smelt are in so if your in the area may as well get ya some!!!

When I was in Alaska we used to fish for something called Hooligan. I think they are the same as Smelt. Small skinny fish that is really oily.
We used a dip net for them and were allowed 60 per day.
The old sourdough's used to catch them and use them for candles. They would put them in a glass jar and then set them on fire. Apparently, because of their large oil content they would burn for quite some time.
I never figured out how to cook them so I never really liked them much. Finally quit netting them cause I couldn't get anyone to eat them.
However, your recipe sounds pretty good. Unfortunately, not any in Arkansas so can't give it a try. But, the same recipe might just work on bream.

YIKES!!! No oil in smelt at all... They are really very good with very little to no fish taste... That recipie works for all fish... simply cut your portions smalller....

Well, doesn't sound like they are the same things. The Hooligan run in schools of thousands. They are about 8 to 14 inches long, silvery and very skinny. But, they kinda taste like 40 weight oil.

These run in schools of 1000's also but avg only 6-7" for now with the larger (?) ones coming in later at 8-10"
