Cracklins is seasoning, they pretty good snacks too! But I really like 'em in a pone a cornbread...MMMMMM-MMMMMM!!! Love it, but then again; ain't s'posed to be eating no cornbread... Corn is a killer for diabetics... Damn near everything out there is full of corn and it's the most fattening; just pure damn sugar once it starts being absorbed by the body. Had a mess of stir fry broccoli, peppers n beef last night...tasted gret and very low calories!

I loves the stir fried stuff. Yep, beef, chicken, pork, shrimp it don't matter. Glucose this morning was at 244. Still dropping slow but sure. I'm making up some master meals to post as soon as I get a few put together. If I remember right one wants a third to a half of one's calories for breakfast with another third for lunch and a quarter for dinner with any others distributed as snacks. Fats go like half in the morning and half at lunch. Carbs are fairly evenly distributed over five meals with about fifty more or less per meal. The old saying is "Eat like a King for breakfast, a Prince at lunch and a pauper at dinner." I guess it makes sense. Near my whole life has been eat one meal a day being dinner and a late snack as big as 2nd dinner.

A little treat for yah Toby.... CONFETTI COOKIES ( Diabetic friendly)
2-1/3 cup flour 1-1/2 tsp baking soda 1/4 tsp salt 1/4 cup butter or margarine, softened 3 oz reduced-fat cream cheese 3/4 cup sugar 1/4 cup egg substitute 1/2 tsp almond extract 1 cup dried fruit bits
(1) Combine flour, baking soda, & salt in medium bowl; set aside.
(2) Beat margarine & cream cheese in large bowl with electric mixer at medium speed until blended. Add sugar, egg substitute, & almond extract; beat until well blended. Stir in dry ingredients; add fruit bits.
(3) Shape dough into 2 logs, each about 9 inches long. Wrap each log in waxed paper or plastic wrap. Refrigerate 1 hour or overnight.
(4) Preheat oven to 350* F. Lightly coat cookie sheet with nonstick spray. Cut logs into 1/2 inch-thick slices. Place on prepared pan. Bake 10 minutes or until firm to the touch. Remove to wire rack & cool completely.
makes 3 dozen

I bet, if I used walnut flour instead of wheat, it'd cut the carbs down and substitute the 3/4 cup of sugar with Splenda, it'd be even more diabetic friendly...
Gonna try 'em the way you posted 'em first! ;D
I had a p'nut butter cookie recipe not long aho that used Splenda that was pretty darn good...I gotta try to find it.

I never tried walnut flour but like you said got to be more friendly than refined white and white sugar. Don't make a whole lot of sense to me to take a good cookie recipe like that and use fake eggs, margarine and the like. Cookies are for pleasure, bake like it. Us diabetics got to know when one cookie is all we can have and not one box of cookies. So bake on! O found some real Kona coffee beans at the Kroger store. $15.00 for ten ounces of roasted beans. I ran into the manager and asked"Say how do you plan to handle the converging paradox?" He said "Huh, what's that?" I replied, "That point where your prices are so damned high that your employees can no longer afford to eat!" He said "We are already having to cut back and use cheaper food."

Almond flour is the best, I made reference to that in my earlier posts..Theres no reason however to cut back on the butter and eggs...Eggs handles cholesterol by itself in its makeup, while by substituting with margarine will give you the chemistry of one molecule short of plastic....I ate plenty of butter and fresh eggs just about every day while I was on my diet and nothing went wrong....I would make a three egg omelet stuffed with some fun ingredients regularly....

Rest assured, I will usereal egg and real butter. Cholesterol is fine, it's the sugar that's fuggin' wiff me... Got a couple Sirloins on the grill, nice n thick and I bought a bag salad... Want a shocker? Look how much sugar is in them gawdamn bottles of salad dressing!!! Pretty much gotta stick with Italian, but that's my least favorite... Crap...

LOL! Toby the light are better now that Splenda has been discovered in the worm hole. Just give them a shake and see if they thinned them out completely. Orrrrrrrr......just don't use so much. Remember, salads are pretty much fiber and every jot of fiber neutralizes a tittle of carb! ;D Now if you boys bake an extra batch of them cookies I'll save my Kona and we can share on the trip to Afghanistasn to kick them fugin' Hadji Ragheads back to where the hell ever they crept up out of the ooze from. And our censored President is not a bit better. Yes he finally qualified for the "N" word. What an absolute asshole. You guys both know you would bitch slap your own brother for acting like that.

Sheriff Arpaio just published preliminary findings on Obama's Birth Certificate. In a nutshell he says it is a fake and so is his Draft Registration Card. He is finger pointing at a whole lot of folk in Hawaii, National Archives, White House and Congress.. This turd is really starting to stink.

Oh you did not follow-through. His request to quash the subpoena was denied, he was found in default and the Judge ordered that his name be excluded from the ballot. Other cases are pending in other states. I think like five other states.

According to Snopes, another Judge associated with the case ruled that ther is not enough evidence to prevent his name from appearing on a GA ballot....GRRRRR!!!!! Supposedly it's in the hands of the Secretary Of State now as to whether he's on the ballot or not.

Awrighty then! ;D Fasting glucose, via finger poke at the doctor's yesterfay was 158...not my best, but it's better than it has been. He had 'em draw blood for the long term glucose checkup and when they called me last night with the results, they said Doc told 'em to tell me to keep doing what I'm doing and no changes to my meds, but that the results of the test were the best I've showed 'em yet. Wanted to know what brought about the changes...I told 'em I had a mighty purty redhead that wants to keep me around awhile so I gotta start getting serious! Also, did a test for testosterone levels. Low end for normal is 350...mine came back 150.
