I am talking about yeast bread, or light-bread.. I finaly put the bread in a pan inside the dutch oven with little aluminium balls to lift it off the bottom.. Works great that way.. And Dave,, what is fire???

Oh so it burns on the bottom then! First you got to "preheat" your oven. Get it up lto temp by setting it on the coals and of course putting coals on the lid. Put your raised dough into the preheated oven making sure lboth have been slathered pretty good previously with a little lard or Crisco. (Like you would a bread pan.) Then cover it up. Every ten minutes or so rotate both the oven and the lid 45 degrees or 1/4 turn to help more evenly distribute the heat. Most recipes will have you baking for about 30 to 35 minutes at about 375 degrees so you want to check progress every time you lift that lid to turn it. At about halfway through take the oven completely off the coals and move them aside. The oven is still plenty hot and the coals on the top will finish it up properly. Seasoned veterans will bake near the fire pit to keep some heat on the sides of the oven as well. More than this, the fire helps keep drafts off the oven which make for inconsistent heating.

Speaking of the GT, we are considering getting hats to commemorate The GT. Looks like they will be Mossy Oak camo with gold embroidered lettering saying 3rd Annual Ohio GT, Salt Fork State Park, May 18-21, 2006.
Once we get everything finalized, I'll post again if anyone wants to order one! Cost will be around $13.00.

The aluminum ball trick will work fine Steve. I read an article about baking yeast bread that recommendced to not pre-heat the oven but to grease it and let the bread rise in the oven then add the heat. For a given heat of 325 to 375 degrees F Use the formula where B=2X D or where B equals the number of briquettes, and D is the diameter of the oven. So a 12 inch oven would require 24 briquettes. Distribute these as follows Top is B divided by 2 plus 2 or 12 plus 2 or 14. The remainer go on the bottom of the oven. On the bottom arrange them in an equadistant circular pattern and on the top do the same but place one or two as the corners of a rectangle around the loop lid handle. This should prolvide consistant heat for up to two hours. At the point where cooking time has about fifteen minutes remaining remove the bottom coals and if desired for rapid browning place them on the lid. Use the eyeball to check how brown the top is and what is desired. I have not tried baking without pre-heating but will next outing. ;D

Speaking of hats. What say we get one for Frank and everybody sign it? sn't DH doing the hats? Could we ask him to have "SSgt Frank Steed" added jto his hat? I'll be happy to finance it. Plus I need a hat for myself as well. p.s. I received two beautiful lures from Brian Warner. He says these are prizes for fisherkids. One for the biggest fish and one for the smallest at the Ohio GT!

Phil, I already got one on order for Frank. When I told the owner of the print shop who the hat is for and what we are planning, he said he will personalize it with "SSGT Frank Steed" on the right side for free. The price of the hat is already taken care of! I'll bring it to the GT so we can all sign it! I think Frank will be real happy.
