Change of plan! Got in that ice box lookin' for the fruit and spied that cheddar cheese sauce left over from the other day. So real quick like I whipped up two eggs and put them in a buttered ramekin and nuked it for a minute and then stirred in a Tablespoon of that cheddar and nuked that some more while a fixed a piece of Texas toast in the skillet and cut up that cantaloupe. So I had a nuked omelet with cheddar cheese and mushroom sauce, fresh cantaloupe and Texas toast.

MMMM sounds good, especially the cheddar cheese omellete in the ramiken! I had two leftover fish planks from Long John Silvers with buttered grits and coffee. Love dem grits!

Whipped up some pancake batter and gridled me up a tall stack and covered them with maple syrup. I also threw several slices of bacon on the gridle and fried them boys up to and washed it all down with a three or for cups of black java. Yumm, yumm!

Man Toby that sounds good! Think I'll do it too. Raining like crazy here so I think I'll kick back and relax before I start doing door hinges. Been trying to "unretire" by pretending to be a handy man Monday to Friday. Come Saturday I'm raisin' hell! ;D

I did it again! But, got a problem! These cakes are getting way too dark before the edges dry. They taste terrific and are very light but damn if they don't look burned on the first side. Flip side browns up about right. Here is the recipe: IHOP Pancakes (or so I'm told) Nonstick Spray 1 1/4 cups all-purpose flour 1 egg 1 1/4 cups buttermilk 1/4 cup granulated sugar 1 heaping teaspoon baking powder 1 teaspoon baking soda 1/4 cup cooking oil pinch of salt 1. Preheat a skillet over medium heat. Use a pan with a nonstick surface or apply a little nonstick spray. 2. With a mixer, combine all of the remaining ingredients until smooth. 3. Pour the batter by spoonfuls into the hot pan, forming 5-inch circles. 4. When the edges appear to harden, flip the pancakes. They should be golden brown. 5. Cook pancakes on the other side for same amount of time, until golden brown. Makes 8 to 10 pancakes. Give it a try and tell me what I'm doing wrong.

That's what I was thinking too. First time I tried this recipe. If it works out right I'll make the change and we can post this recipe. I had to add a little water to the batter to get it to suit me but not quite sure how much, probably about 3 TBsp to a quarter cup. TT

I tried it this morning! They browned right on both sides and tasted pretty darn good. This recipe is very, very close to, if not the regular way I was taught to make 'em. I put them on my electric gridle set on 300 and they took a little while to bubble up to turn, but they turned over just right. I added a few cups of coffee on top of that stack of pancakes and maple syrup! Ya'll notice how Aunt Jamima ain't Aunt Jamima no more? They got some modern looking "Woman of color" rather our beloved old Mammy.

Well Hell's bells then maybe my mix is too thick then! Did you sift your flour Toby? I went ahead and adjusted the recipe in the archives adding a little water and reducing the sugar. They really do taste great don't they! How thick did your batter turn out?

Batter was thick, but I don't think it was too thick. I thought while I was cooking them that they might have needed a little more buttermilk. I put in the 1 1/4 cup, but was thinking next time I't try 1 1/2 cups. Yep....delicious!
