Mike and I went for a little drive. Stopped by Speedway and picked up a 14" pepperoni pizza and two 2-liters of Pepsi for $7.25. Got 1000 bonus point too. Took the pizza and pop out to Lake Alma and enjoyed a couple hours just sitting enjoying each other's company without work staring us in the face. I think Mike really liked it out there. He kept counting how many grills and fire rings were at each site...if it had electric to the pavillion...if there was a horseshoe pit...if there were johns...where someone could lay a blanket and have a little roll on the ground.....Of course, I couldn't seem to leave work at home and we spent most of the time discussing fence building. But it was a whole lot less stressful of a discussion. Had a real enjoyable time. I didn't want to come home!

In a skillet cooked 1 pkg of Wel Pac Chuka Soba Chow Mein Stir Fry Noodles. Drained. Tossed with a can of sliced bamboo shoots, a couple tablespoons of oyster sauce, about a half tablespoon of lite soy sauce, some sesame seeds, a medium chopped onion, a clove of garlic, a handful of chopped red bell pepper, and a shake or two of red pepper flakes. Tasty!! Next time, I'm adding some pork.

Mom made us beef & veggie soup, chefs salad, crackers, cottage cheese, and BIG serving of strawberry shortcake. Mom's been harping at me for six months about my sugar. She started in again today...Stuffed my purse full of diabetic magazines and doctor literature...."You gotta change your diet. You gotta "this". You're gonna have to "that". I'm getting mine under control and I know you can too......" I usually don't speak up to mom. But I did today. Told her to spend a week at my place and find out I ain't eating or doing any of the stuff she thinks I am. Unless we're making an all day road trip (i.e. - going to their place) what she thinks we're eating all the time just plain doesn't happen. Guess I'm going to have to start forwarding all my grocery/meal receipts to her. LOL And I do go in every six or seven months and have it checked. Told her Doc has run every test under the sun and is dumbfounded that all my "diabetic symptoms" are nothing more than a bad nervous iced tea/cig habit, not sleeping good because of a crappy mattress and horrible nighttime allergies, and physical exhaustion from the lack of sound sleep and a much higher than normal level of manual labor. Anyways, this was about an hour after lunch and mom figured that since I'd just had half of that 14" pizza (oh yeah, and a king sized Payday bar) for breakfast about a half-hour before having lunch my numbers would be through the roof. So, she gets out her meter and we both got a 1-hr after eating reading. Bwahahahaha! I was 99!! Mom was 146. She thought for sure I'd be in the 200's. Maybe she'll leave me alone now? Doubt it.

You can have your avocado ice cream. Avocados are nasty! Don't even like guacamole. My ice cream was in the form of a Frosty on the way to get feed this morning. As far as actually having lunch? Same as breakfast...skipped it.

I can't win for losing. After finding out that Mike had no clue what the caloric/fat/carb intake should be for a man his age and activity level (he thought 15,000 calories a day was about normal), and going over what was 'normal' and what he'd need to cut back to lose weight, Mike decides to fix two 14-oz round steaks for HIS lunch and puts them on two huge sesame seed buns with mayo, bbq sauce and 6 slices of cheese. Washed down with a 40-ouncer. I'm like, "dude, you got enough food on that plate for five or six folks, and there's 550 calories in that beer!" Mind you now, this is JUST HIS LUNCH. So I take one steak and hunk it up. Cooked it in a little EVO and added some frozen chopped broccoli, red bell peppers, snow peas, onion, a tbsp lite soy sauce, 1/2 c bone boilings, and about 1-1/2 tbsp of sweet & spicey mustard. Grated about 1/4 of an orange peel into it and at the very last minute decided to add just a 1/3 c of minute rice just to soak up what liquid was in the pan. Then I explained to Mike that my one steak and a bag of veggies will feed at least five folks. And it's better for ya! So what's he do?? After eating both of his steaks and those monster buns, he turns around and eats half of what was in my skillet!! DAMMIT dear!!! It don't work that way. The other half of the pan was my lunch AND supper, AND there's plenty left over for breakfast too.

Found a quart jar of cucumber salad in the back of the fridge. Checked the calendar. Made July 25th. Just a hint of an off flavor. But not enough to detract from it being good to eat.
