WOOOOOO_HOOOOOOOOO!!!!! HEY TOBY, CATCH THIS SACK!!!!! Just a couple little roaster pigs. Oh yeah, don't make them sqweel either, their Momma is mad...... ;D I gotta go bring some corn to the trap, we got us a couple NICE shoats for tomorrow, about 100 lbs each. Looks like Momma sow has give up now Toby, you can come on down. When I come back, I got a nice sack of crawfish and 10 or 15 nice whisker fish. Nare on to 5 lbs apiece too. Hey Paws, the beer keg is over by the creek. Salt and other fixin's are hanging inside the cypress log over there. You'll even find a half dozen goose eggs that Mimi sent to me. Her Papa goose died and her momma goose won't stop laying. They equal about 3 chicken eggs apiece. Has anyone seen my whittling knives and whet stone? Where the heck did they go. EVERYTIME I gotta clean something I miss place my knives..... Here's a fillet knife for the fish but I need them other knives for the suckling pigs....Oh yeah, Paws there's a big stack of red oak and hickory over on the back side of the cypress log too. Be sure to hook them logs off the pile with that stick, them "Rattleheadedcoppermoccasins" tend to bed up in the wood pile. Now, where did I put them knives.....

STILL can't find my knives!!!! This is really starting to get me fired up now. Oh well, I'll just use my standby buck. Toby, you got them squealers looking just right. I put some cold water with salt and vinigar in the basin there. You can quick soak them in that if you like. I'll be back in awhile. I gotta go get them fish cleaned and get Paws away from the nudist camp. I'll bet he's hung all up in that fence and come around midnight they'll turn on the electric to it and Paws will be in for a ride, then again, maybe I should just let him find out on his own. What do y'all think?

You probably left them knives on your cuttin' board back at the house when you was cuttin' up all of that trot line bait. Here, put that buck away and go to work with this Puma of mine. This Kraut steel holds a pretty good edge.
Oh man, them little squealers is gonna be good! They had a nice thick layer of fat on 'em and they'll be just right to put on a spit.
Ya'll need to lay off of catchin' them catfish unless you plan on smokin' a mess of them for later. We can only eat so much.
Reckon I better get to pokin' around on the far side of this island as soon as the sun comes up and see about gathering up some veggies. I bet bet I can find a head of swamp cannage or two if I look real hard. I caught a glimpse of some of them palms in the lantern when I was helping Brian with them frogs, which we'd better get to soaking soon if Paws is gonna fry them up with them goose eggs for breakfast.
Ya'll hear something?

Sure did....Just like I said, they turn that electric fence on at the nudy camp just awhile after dark....I told we'd find Paws soon.....He'll be along pretty soon now I guess.... ;D Y'all think I shoulda warned him about that fence?

Alright, the fires down to a pretty bed of coals. Preacher, if you don't mind will ya get that big kettle over there full of water and don't be shy about dumping in all of that season over there. If we gonna boil this mess of mudbugs brian toted in for us, you gots to get that water mixed right.
I 'spect Paws'll be along in a little while and he'll see to roasting these suck pigs.

Just getting a few things set for you guys. I gotta head back to the high ground to get the throat stretched again ain the morning. I'll be backsometime Tuesday. There's a bunch of nice catfish in that cage there at the edge of the creek. You have 3 nice hogs in the trap about 1/2 mile up the creek. When you pop them, don't clean them until AFTER you float them down the creek and be sure to tie that burlap sack full of guts on the line BEHIND the hog you floating down the creek and keep at least 25 ft between you and the hog, then at least 15 ft between the hog and the burlap sack. That way the gators will grab the sack instead of the hog it's stinkyer and they like it better. Pull the hog clear of the creek before you get close to it just in case. 3 legged Joe is around here somewhere and he likes to put the scare on folks. I heard him bellowing last night. Hey Preacher Freddie, I got a couple of beers, 1/2 dozen oranges that Toby brought with him and a couple of lemons for that crawfish pot. It really IS a crawfish pot, it WAS a beer keg before I fixed it. Here's a crate of sweet corn and a sack of taters too. Got a whole basket of goose eggs in the cooler and a block of nice cheddar cheese Miss Faith packed in there too. Y'all know where to find the ham...LOL. The swamp cabbage is on the west side of the island and the rest of the veggies are hanging up there in that big basket. Now, if it isn't too much trouble, could one of you guys run me up the creek to the launch spot??? Miss Kathy is supposed to come get me about dark. See y'all either LATE monday or real early Tuesday. Can I bring back anything besides some old fashioned slab bacon, milk and ice?

Here's a few bucks to get a few things on the way back. I reckon a box or two of Cohiba's will be good. Try the Honduran tobacco, it's pretty mild. And we're gonna need a new jug too, this un's about dry. Some more Ice to replenish these coolers would be good and I think a sack of corn meal for to fry up them kitty fish'd be great. Now get!
Oh wait a minute....here, take a plate of the frog's legs to Miss Kathy and tell her I said thanks for packin' all them grocery fixun's you toted out here. I'll see to them hogs first thing this afternoon and don't worry about nothin'. Preacher Freddy's got his eye's on us; we'll behave.

Hey, did Brian say we had any salt? I'd like to put these mud-bugs in some salt water before I put them in the pot. That salt water sure does clean them out good. Think I'll put them taters in with the mud-bugs. Gives them a different flavor. Ya'll want me to add some ears of corn too?

Well, made it back ok guys. I gassed up the boat and got everything on the list. Even came across a few nice cantalopes for the morning. Stretching went good. I'm all the way open now. Get to go back in a month for a double check. Boy, you can small all this food from 1/2 a mile away. Now, lets gain some weight boys..... ;D

Thankyou much Preacher Freddie. Here's you a bucket full of bugs and a bowl of broth, Awwww, never mind, CLEAR THAT TABLE BOYS, Here it comes. Nothing like a pile of Crwfish and veggies on top of the table, we don't need no plates around heeeah. Just toss them heads or sherlls in the creek. Ol' Mr wWhiskers will be here in a bit too. We can just cath him and let him go in the cage there on the edge. I guess I forgot to let you guys know about that. Them 4 stakes over there in the creek are sort of a live well. I got them fenced in, sort of a fish corral if you will. Take all you want, but don't waste none either. Oh and don't forget to throw them a few bites as well. Last count we had about 20 nice ones in there. Hey, how did those suckling pigs come out??? I'm thankful you guys went easy on them spices for me too. Nothing like red pepper across a sore throat. You got these bugs just right, good flavor with out a burn if you know what I mean. Don't mean to ramble on guys, still got a little medicine in me I guess. I asked the Dr about a stent or something to keep my throat open. He said that it wasn't going to work because of where the problem is. It would be like haveing a perpetual finger stuck in my throat. In about a month, I get to go back and get checked out again to see how fast it starts to close up again. Hey Toby, after lunch and a nap, how 'bout you join me in a short walk??? Got to go to the cypress stump and lite the fire if'n you want to fill that jug again. Won't take too long and while we're out, we can gather a bunch more of them muskadines for Preacher Freddies jug too. OH yeah, Mandy sent us some nice sweet tea with peach in it. Good stuff guys... I think, I'll lay down in my hamock a while. Maybe one of y'all will wake me before dark or daylight even if it takes that long..... Thanks for fixing the grub and watching over things. By the way, where in the world is Paws? Surely he didn't miss out on all this food and cooking. Only thing missin's a little Joe Dolce playin; on the radio, but then, that'd drown out all that blessed quiet, this old swamp has to offer. Maybe I'll just hum some of them old cajun waltzes in my head.
Mmmmmmmm, I do love a mess of boiled crawfish. I ain't sure how long we're gonna be able to stay visitin' out here on this little island, but I'm glad I came. This is some fine company sho' nuff!
Now, I hate to wake up Brian, but the sun's fixin' to set and he wanted to take that walk...

Arthur Treacher's Fish Batter
3 Pounds Fish Fillets 2 Cups All-purpose flour 3 Cups Pancake mix 3 Cups Club soda 1 Tablespoon Onion powder 1 Tablespoon Seasoned salt
Dip moistened fish pieces evenly but lightly in the flour.
Dust off any excess flour and allow pieces to air dry on waxed paper, about 5 minutes. Whip the pancake mix with the club soda to the consistency of buttermilk- pourable, but not too thin and not too thick. Beat in the onion powder and seasoned salt.
Dip floured fillets into batter and drop into 425 oil in heavy saucepan using meat thermometer. Brown about 4 minutes per side.
Arrange on cookie sheet in 325 oven until all pieces have been fried.

MMMMM From the looks of this, we won't need an oven. I just don't think the fish is gonna make to the pan for keeping warm. Wait, look, that there piece was trying to get away. I caught it and ate it though and it won't try again. OOOps, theres another trying the same trick, good thing I'm here y'all, The fillets might have made it back to the water.....
