Brian what say we put in some herbs down there in the swamp and maybe a few fruit trees along with some berry bushes too. Them hogs and beasts will love that stuff and they will keep them berry vines from getting overgrown. I got spearmint, wintergreen, and peppermint leaves all dried and ready for a tea ball. Which one goes best with roast hog, Rosie Beast or braised Reno?

We can plant them herbs but the mint won't last but a lick or 2. The hogs and deer around here have a thing for mint. Could be all the candy canes and Sonic Peppermints I throw for them. What ever we plant, we need to try and keep it up on red clay hill. See them lines on the trees where the moss stops, about 10 ft up there?? That's the high water mark. Come around spring with the good rains it may get that high. It all depends on if they finish working on the dam. If they do the water will rise for a couple weeks, if not it'll stay real low. That was why we were able to hang out this spring, They stopped work for the rain and left the dam dam open....

I got a bunch of your persimmon trees that need transplanting I'll be glad to tote in on my next trip out. That little rise out on the north end ought to be perfect for them. If they take, it'll be like a candy store for the critters.
I saw some pretty nice sized deer tracks near the creeks edge on a crossing. Them dew print were really obvious in the back and the hind foot didn't reach all the way up to the front foot print. That's a buck! Toes were splayed pretty far apart too, tells me he ain't no youngun'.
I'll be building a ground blind about twenty-five yards to either side of the crossing. That way no matter what direction the wind is coming from we'll have a good spot.
Season opener's coming up and since Brian's been laid up the most, how's about you bring that crossbow out and take the first days sitting? I'll help ya get him into camp and I bet Paws will offer to rotisserie that boys ham up like that Islamic greek feller he told me about! That recipe sounds great!

There iIS a huge buck that runs through here. He usually runs at night though. He's at least 9 points and weighs over 200. There is also a big boar we need to take out. He's over 300 lbs and meaner than Miss Kathy when we show up late for supper. I know of 2 sows he's taken out and who knows how many shoats. If we get him, we can tote him up to that church at the end of the road. Lots a poor folks there who will love to have it. They'll turn him into sausage so it won't be too bad eating. Y'all think that meat pole is going to be ok??? I can cut a new one if we need. Theres a little hickory over by the creek crossing. OH, did you guys see all the squirrels in that big hickory nut tree over on the south side??? I sat there yesterday and counted 27 in less than an hour.....

WHERE IS EVERYONE? This camp has had no fun in awhile. I gots food and I took a bath, so that aint it. I even got the deer lined out so the hunting is great. I guess, I'll just head on up to the clearing and see if I can't get a deer this morning.

I'll be there as soon as I digest yesterday's dinner Brick! Man oh man what a feed!! That table was groaning under the stress of dinner. Fifteen dishes not including the cheese, cheese spreads, relish tray, beef stick, and summer sausage, crackers, nuts, dips, and pies laid out on the kitchen counter. Lordie I had dinner eaten before she got back from the nursing home with Dad! Just kind of worked out that way as I got the turkey and sides finished off and ready for dinner. I had stayed up the day before and had a total of 12 hours into getting the food just to the point where 20 minutes would finish it off and that included the shortcut provisions. With the quantity of dishes it still took two hours to finish off everything. Had to heat up the turkey, brown the sweet potatoes after warming, warm and top and brown the green bean thing, heat up everything else and finish tossing the salad; oh which reminds do not put your raisens into your Waldorf salad before hand cause they turn it black. Still tasted great but looked funky! I'm just finishing repacking and putting away the leftovers. Had to stop and have a bowl of noodles, turkey and dressing for breakfast!

What watermelon Paws? That darn thing rotted away a long time ago and we fed it to the hogs.
Freddie, I bet there's still a mess of cats in that hole in the bend of the river, so if you'll grab them cane poles I got cut over yonder and hop your skinny butt in this pirogue, I bet we can have a mess oft hem caught and cleaned by the time Paws gets the coal right for the skillet.

Glad them worms ain't dead cause that AZSlim is cookin' fish for supper and maybe he might need some more for that grill. Roughie! Shoot he ain't seen rough until he tries to skin one of these flathead squealers! I need to lay a new bed of coals here. Them charcoal briquettes left here more'n two years ago done petrified and got these shiney little glass beads all in 'em. I don't think I can get a fire goin' with this junk.

Pork rinds? Well, there's quite a bit of rooting down the way toward that stand of pecan trees along the creek leading towards the catfishing hole.
I reckon I can slip back down there and catch one coming in unawares. You feel like rendering the lard out, you can keep all the cracklin' skins you want. Once we get one of them fresh hams cooking, it'd be awful nice if you'd load that skillet over there with some cornbread and toss in a double handfull of them cracklin's. Got any sweet onions to cut to go with it?

Got these wild onions, wild garlic, ranps, and cat tail root. If you can find any of last years pecans down there bring back a sack and we'll just skin that pig close to leather then trim off the fat rather than render it off the skin. That way we can hot up the lard whilst we cut up them skins into half inch squares. Shame to waste a sucklin' pig like that though Aw heck, snare two and well roast one and use the skinned one for bean meat.

Well, I guess we gonna hafta wait on one to get in the hog trap, on accounta I didn't kill one of them young rooters. Not that I didn't get the chance, but whilst Preacher Freddie was napping over by the big sycamore tree, I slipped that flask of "Holy Water" outta his coat pocket and after a couple of sips, I couldn't hold that gun straight enough to hit the side of the barn....even if I was inside it!
I sure felt the spirit that evening, I guarantee. I even felt that spirit the next morning while my head was a pounding from dat Holy Water hangover!

Don't be wastin' all that Holy water there cause we'll need some to baste that hog when we get to rendering down that fat. Need to smoke them hams, belly bacon, loins, jowels, hocks, and shoulders so best be gathering up some pecan hulls round here and soakin' them down. Brother Freddie can you put a fire under that big old iron soap boilin' kettle for rendering out that skin? We'll scrape it down of the fat and render it out for using to fry up them cracklin's and rinds. We get them hams smoked we can plan on some fine eats here shortly.

I'll try to get a fire started, but I'm not Elijah. I have to do it the hard way. I can't call fire down from heaven like he did.
These skeeters are starting to get thick again. Think after I get it going, I'll put a little of this wet cypress on the fire. Ought to make a good smoke to get rid of the skeeters.
Hey Toby, just so you know, that wasn't holy water. Baptists don't believe in that. That was actually a apple vinegar that I brought hoping to try to fry some catfish in it to see if it would give them a different flavor. Now you done drunk it all.
